Born in Donegal, Paul started his catering career in Kee’s Hotel Stranorlar where he spent four years working his way up to Head Chef. In October 1990 Paul decided to move to London to further his career and gain experience. His first year was spent working under Brian Turner at The English Garden Restaurant in Chelsea. He then moved to Mayfair to work at the famous seafood restaurant Scott’s on Mount Street.
In 1993 Paul began working for Sir Terence Conran at the soon to open Quaglinos on Bury Street. The flagship restaurant of the Conran Group opened on Valentines Day 1993 with a brigade of 60 chefs who catered for over 1000 customers a day. Paul spent 4 years in Quaglinos, the last two years as Senior Sous Chef in charge of the day to day running of the kitchen in the multi million pound restaurant.
After a period working at famous Mandarin Oriental Hotel in Hong Kong, Paul then
became the Conran Groups youngest Head Chef when he was appointed to the position at Zinc Bar & Grill on Regent Street. Here he was responsible for the setting up of the kitchen for the new venture.
In 1998 Paul was invited back to Quaglinos to create one of five courses for their 5th Birthday celebrations along with John Torode of Masterchef fame, the Michelin starred Chris Galvin, Jeremy Lee of Blueprint Café and Quaglinos Head Chef Henrik Iversen.
Also in 1998 the CATERER Magazine, widely regarded as the catering industry’s premier publication awarded Paul one of their prestigious Acorn Awards. These awards are given to high Achievers under 30 years of age in the catering industry with previous winners including Marco Pierre White and Gary Rhodes.
Late 1998 saw Paul move to Dublin to take up the position of Head Chef at La Stampa on Dawson Street, There he spent two years at the helm of one of Dublin’s busiest restaurants.
After two years he moved to Belfast to plan and oversee the opening of Shu on the Lisburn Road in October 2000. The next five years were spent developing and nurturing this hugely successful restaurant, winning AA Seafood Restaurant of the Year along the way.
In 2005 Paul took on the role of operations manager for Bourbon Restaurant on Great Victoria Street. Paul spent over 4 years in the position before starting Mango Catering & Events in 2009.
